Gluten-Free Tabouli (Tabboulleh)

INGREDIENTS

  • ½ cup quinoa, cooked according to package directions (OMIT if keto)

  • 1 Bunch of parsley finely chopped

  • ½ cup fresh mint, stemmed and minced

  • 3 green onions, finely chopped

  • 2-3 medium tomatoes, diced

  • ½ cup lemon juice

  • ¼ cup olive oil

  • Salt and pepper to taste

INSTRUCTIONS

  1. Cook quinoa according to package directions.

  2. While quinoa is cooking, prepare and combine the rest of the ingredients.

  3. After quinoa is cooked and cooled, add to rest of ingredients.  Toss well.

  4. Refrigerate until ready to serve

  5. Enjoy!

I made this last night and served it with chicken shawarma and homemade hummus.  My teen especially enjoyed it!
