Baked Apples

I usually prep and bake these the night before if serving for breakfast on a school day.  This also makes a tasty dessert, especially if you add a scoop of vanilla ice cream.  My kids have been known to pack the cold left overs in their lunches.

INGREDIENTS

  • 6 medium-large Apples, peeled and cut into bite size chunks
  • 4-6 Tbsp Coconut Oil, enough to coat the apples

  • 2 Tbsp Honey

  • 3 tsp Cinnamon

  • 1 1/2 tsp Nutmeg

  • 1/2 tsp Salt

  • 1 cup chopped Walnuts (optional)

INSTRUCTIONS

  1. Preheat oven to 375 degrees.

  2. Toss apple chunks with other ingredients, except walnuts.

  3. Bake covered for about 35-45 minutes or until tender.

  4. Top with walnuts and bake an additional 15 minutes, uncovered.
