Sauteed Greens

Prep time: 10 minutes

Serves 3-4

INGREDIENTS:

Olive Oil

1 bunch green onions, trimmed and thinly sliced

1 bunch asparagus, trimmed 

3-4 cups pea shoots and tendrils

1 bunch chives

3 cloves garlic

Salt and pepper

Juice of 1 lemon 

Cheese for grating (Manchego was on hand)

3-4 Eggs (optional)

INSTRUCTIONS:

Heat enough oil to cover bottom of large skillet on medium-high heat.   Add green onions and cook for about 30 seconds. Add asparagus and cook until slightly tender, about 3 minutes.  

Once asparagus is cooked, remove from pan and add pea shoots.   Splash a little water to create steam to wilt them.  

Drizzle some more olive oil and add the garlic and chives, tossing until everything it wilts nicely, about 4 minutes or so.  Return asparagus to pan and season to taste with salt and pepper. Drizzle a little more olive oil. Cook until all is tender, but not mushy, about 1-2 minutes.  Squeeze lemon juice to taste.

Serve with grated cheese and fried egg if you like!
