Quesadillas
I try to fill up the kids with protein in the morning. This is a fast, easy and delicious meal (if okay with corn tortillas). For protein I use whatever we have in the fridge, such as leftover chicken or sausage. If neither are available, I will mash up 1 can of pinto or black beans with cumin, oregano, cinnamon, garlic powder and onion powder or fry an egg to top off the quesadilla.
Time: < 10 minutes
INGREDIENTS
Organic corn tortillas
Cheese (optional), we tend to use Monterey Jack or Colby goat’s cheese
Protein Topping (leftover chicken, sausage, beans, egg, etc.)
Avocado
Black Olives
Cilantro
Salsa
PREPARATION
Place tortillas on skillet over medium heat. Add cheese (optional) until melts. Remove from heat and top with select healthy proteins and healthy fats.
