Plantain Pancakes

These are a big hit with all my kids and are easy, fast, filling and healthy!  Maple syrup optional.

INGREDIENTS

  • 2 large plantains, peeled

  • 3 eggs

  • 2 tsp vanilla

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • Grass-fed butter/ghee or coconut oil for cooking

INSTRUCTIONS

1.  Blend plantains, eggs, vanilla, baking soda and salt in blender.  Blend until smooth.

2.  Melt the butter or coconut oil in pan over medium heat.  Once the pan is hot, pour batter onto the pan.

3.  Cook until bottom edges are golden brown, flip the pancakes and cook the other side for 1-2 minutes, or until thoroughly cooked.

4.  Enjoy!
